A Boise food venture specializing in lefse, a traditional Norwegian potato flatbread, is expanding from a mobile operation to a brick-and-mortar location in the city’s historic district. Loving Lefse, founded by siblings Angeline and John Riley in 2024, will open its downtown storefront this summer while maintaining its food truck presence at Green Acres Food Truck Park.
The business emerged from a family tradition that stretched back generations. The Riley family gathered annually before Thanksgiving to prepare lefse together, discussions during those gatherings eventually led to the creation of the commercial venture. The thin, soft flatbread is traditionally served with butter, sugar, or cinnamon.
From Family Kitchen to Food Truck
Angeline Riley developed a business plan that brought the concept to life approximately two years ago. The siblings launched their mobile food operation and began introducing Ada County residents to the Norwegian specialty. Operating from a single food trailer, they found immediate demand for their product.
Sales at Green Acres Food Truck Park frequently resulted in the business selling out its inventory. However, the labor-intensive nature of lefse production created operational challenges without a dedicated commercial kitchen. The preparation process requires up to two days from start to finish, making it difficult to replenish stock while serving customers from the trailer.
Production Challenges Drive Expansion
The time-intensive production method became a limiting factor as customer demand grew. Without the ability to close the food trailer and continue production simultaneously, the siblings faced inventory constraints that restricted their ability to serve customers consistently.
The decision to secure a permanent location addresses these operational limitations. A dedicated storefront will provide the kitchen space necessary to maintain production while keeping service windows open. The downtown Boise location will give the business visibility in a high-traffic area while allowing for expanded preparation capacity.
Maintaining Food Truck Operations
Despite the move to a permanent location, Loving Lefse will continue operating its food truck at Green Acres Food Truck Park. Angeline Riley noted that the park provided early support for the business when it was still establishing itself in the Boise market.
The dual-location strategy allows the business to serve customers at both the downtown storefront and the food truck park. The permanent Green Acres presence will continue alongside the new historic district location, giving customers multiple access points to purchase the product.
Cultural Connection and Community Impact
For the Riley siblings, the expansion represents an opportunity to share their Norwegian heritage with the broader Boise community. The downtown location will allow passersby to observe the traditional flatbread-making process, potentially connecting with customers who have their own family traditions involving lefse.
John Riley indicated that the storefront will provide particular value to members of the Norwegian community in the Treasure Valley. The visible preparation process may evoke memories for customers with Scandinavian backgrounds who grew up making or eating lefse with their own families.
